Question:
How does covering with banana leaves affect the ripening time of a certain fruit?



Replies:
I believe many fruits release the gas ethylene as they ripen, and that ethylene also speeds ripening. So, if the fruit is covered, the ethylene it releases is kept next to the fruit instead of escaping.
