Why do sockeye salmon and kokanee (landlocked sockeye)
turn red when they spawn?

As part of it mating ritual, the salmon actually begins to die. The red
color is the start of the animals deterioration of death. It's last bit of
energy is for the fertilization of eggs. All adults die after that function.
